Our idea for The Pizza Guys was simple. We wanted to go back to basics in a big way. No rolling pins, no bread mixes, no mystery meats or shortcuts of any kind. Armed with a passion for pizza and artisanal baking, and a near-crazy obsession with fresh, quality ingredients, we set out to learn how to make few of our favorite things.
First stop: Associazione Verace Pizza Napoletana, or the Association of True Neapolitan Pizza. We trained with the masters and learned old world artisanal methods for cooking Napoli pizza. From there we discovered the secrets of rustic artisanal breads, and studied our way down to the molecular level of that deceptively simple thing called dough.
We mix, shape and proof all our dough and bake artisanal sandwich bread twice daily. We’re constantly monitoring the temperature of our brick pizza oven to make sure that your pizza is cooked at the right temperature to seal freshness in. Really you can say we’re obsessed with freshness because we don’t even have a freezer.
Fresh. Homemade. Artisanal. That’s our food philosophy, every single day of the week.
